Easter egg nests such as these cornflake easter nests are such a simple easter recipe that I just couldn't resist making them with Lara. I found this recipe on the BBC website and I liked it because it was something more than just chocolate! I would say that the butter and syrup mix definitely added flavour and richness but that it pooled in the bottom of the cake cases which was a bit offputting!
INGREDIENTS Makes 10-12
225g plain chocolate
50g butter
2 tablespoons golden syrup
75g cornflakes
mini eggs to decorate

METHOD
- Break the chocolate into a heat-proof bowl and chop up the butter into cubes. Add the butter and the golden syrup to the bowl.
- Put the bowl over a pan of simmering water and stir constantly until it is melted and smooth. Don't let the water boil or else the chocolate will separate.
- Once melted, add in the cornflakes and stir to coat them all.
- Spoon the cornflake mixture into cake cases and decorate with 3 or 4 mini chocolate eggs.
- Put the nests into the fridge to chill and harden for an hour before eating.
